3 Breakfast Ideas to Wow the Kids

Are the kids bored with the traditional toast, scrambled eggs, cereal and pancakes? Have they started to say *ugh* when you rattle off options? Is french toast, eggs, bacon and yogurt not a pleaser anymore? Our Co-Founder Danielle has 3 amazing go-to recipes she uses to spice up her breakfast menu AND one extra from a foodie mom blogger. These are delicious options you must try at your next Sunday brunch meal!  Fun, easy and kid pleasing recipes.  These are a parent win and the kids will say "more please!"  

EGGS BENNY

This classic breakfast (or dinner) recipe is Danielle's son’s favourite.  Anytime her family goes out for breakfast, this is his number one request and it’s easy and delicious!  WIN: Danielle's husband has become a pro at making this dish so she says "double bonus."

What you need:
English Muffins
Eggs
Peameal Bacon *irresistible* or Ham
Hollandaise Sauce Mix (we love the McCormick Brand from our local grocery store)
Non-Salted Butter (add salt to taste)

How to prepare:

  1. Fry your Peameal Bacon or Ham in a pan (set aside)
  2. Make Hollandaise sauce (follow the package instructions)
  3. Bring pot of water to a boil
  4. Crack one egg at a time in your boiling water (cook for 5 minutes)
  5. Toast your english muffins (Danielle likes to butter these right out of the toaster)
  6. Add a piece of ham or bacon to each english muffin half, top with an egg from the boiling water and pour sauce over top.  Add salt and pepper to taste.

NUTELLA FRENCH TOAST PEROGIES

Danielle's daughter came up with this genius idea. Made for the first time this summer, her family is hooked! What they love most about this recipe is how fast and easy this dish is to prep and cook. 

What you need:
Bread (with crust cut off)
Nutella
Eggs
Milk
Cinnamon 
Butter 
Maple Syrup (optional) 

For a batch of 8-10, use 8-10 bread slices and 4 eggs for the egg wash with a 1/3 cup of milk added to the egg wash.

How to prepare:

  1. Remove crust from bread slices
  2. Add a small amount of nutella to the middle of each slice 
  3. Fold in a triangle shape and pinch the edges together
  4. Make Egg wash (crack egg in bowl, add a small amount of milk, cinnamon and stir together) We love lots of cinnamon 
  5. Coat each side of the french toast pierogi in egg wash
  6. Add butter to frying pan and cook each side for 2-3 minutes 
  7. Serve with maple syrup if you want extra sweetness

CREPES

Danielle's family enjoy these for breakfast, dinner and (sometimes) lunch. Always a friend and family pleaser. Our ultimate family favourites are crepes filled with cheese; peaches; or nutella with strawberries and whip cream:

What you need: 
Flour
Eggs
Milk
Water 
Butter 
Filling (shredded cheese, peaches, nutella, strawberries or whatever you like as a filling) 

How to make the batter (use a blender for best results):
This batch makes 5-7 crepes. Double the recipe for extra crepes.  

Add 2 eggs to a blender 
Add 1 cup of white flower
Add ½ cup milk
Add ½ cup water
Add 2 tbsp melted butter.
Blend until smooth (you may need to use a spatula to scrape the sides of the blender)

How to make the crepes:

  • Using a hot crepe pan or frying pan, add a little bit of butter
  • Pour batter into pan (use ¼ cup of batter for best results). For larger crepes use 1/2 cup batter per crepe.
  • Flip after 30 seconds, cook for another 30 seconds
  • Add your favourite filling in the middle, roll and enjoy!

We like to fill our crepes with shredded cheese, roll and bake in the oven at 350 degrees for 3-5 minutes.  Try cheese with sour cream or maple syrup.  Another favourite is canned peaches (for warm peach crepes, bake in the oven for 3-5 minutes) or try nutella with whipped cream and strawberries.
